Sometimes you just need a cookie....

I have a major sweet tooth.  And so does my family.  We really try to avoid sugar most of the time but once in a while one needs a cookie.  AmIright?! I don’t want my treats to derail my food plan or make me feel yucky (read: foggy, sluggish, tired, stuffy) so I try to find treats that fit into our normal eating habits.  This recipe is modified from

These are surprisingly delicious and I didn’t feel too guilty about giving them to my kiddo since they don’t have much sugar in them.  Plus they are full of fat, fiber and protein. 


Chickpea Chocolate Chip Cookies (Grain-free/Dairy-free)

1.5 Cups (overfull) or 1 15oz can chickpeas

½ Cup nut butter (peanut, almond, sun butter…)

3 Tablespoons maple syrup

1 teaspoon baking powder

2-3 teaspoon vanilla

Large pinch of salt

½ cup chocolate chips (vegan for dairy free)


1.     Preheat oven to 350 degrees and line a baking sheet with parchment paper

2.     Drain and rinse the chickpeas

3.     In a food processor or blender combine: chickpeas, nut butter, maple syrup, baking powder, vanilla and salt.  Blend together until smooth, scraping sides of blender as needed. 

4.     Fold in chocolate chips

5.     Roll or scoop ping-pong ball sized balls onto cookie sheet.  Press each dough ball slightly

6.     Bake 10 or until golden brown.

7.     Eat all the cookies or store on your counter in airtight container
